You Should Make: Meringue
You really should be making Meringue. It's bloody easy, and will make you popular with whomever you share them with (friends, family, colleagues, ...). Id' show you a picture, but I ate them all already.
You need, egg whites (as many as you have), and 50 g of white sugar per egg white.
Put the egg whites in a bowl, and mix them with an egg beater. Once the whites start to become firm, add half of the sugar. Once they are firm add the rest of the sugar. The mix is firm enough when you can flip the bowl upsiode down without the mix falling out.
Checking Firmness
To check the firmness of the slowly pull the whisk out of the mringue and observe how long it takes for the tips to fall back down. Once they start falling graciously instead of flopping, you're nearly there.
Take a baking tray, and put a sheet of baking paper on it. If you have a piping bag, pipe out nice circular meringues, otherwise, use a spoon to drop dollops onto the sheet.
Stick the tray in the oven at 100 °C and leave them there for at least 3 hours. You don't need to pre-heat the oven, they are staying in there so long that it won't make a difference.
Meriungue isn't really cooked. It's dehydrated. That's why it needs such a low temperature. You just need to sweat them until there isn't a drop of moisture left in them.
Energy Saving
Allegedly, and I haven't tested this myself, if you have baked something in your oven, you can just stick your meringue in the still hot oven, and leave them there overnight. They should be done in the morning.
Debugging Your Failures
If your meringue is sticky, you just didn;t cook them long enough. They need to cook for a long time because you want to get absolutely all the moisture out of them. Just stick them into the oven again for an hour.
This even works to revive your meringue if it's been left out for a while and has absorbed humdity from the environment. Just stick them back in the oven to dehydrate them some more.
If your meringue is yellowish, the temperature was too high. Next time, lower the temperature.
